Irma López is the main cook at El Tzitz.   Originally from Comitán, she has lived in San Cristóbal and has worked in the house and kitchen of El Tzitz for more than 20 years. Irma has developed her culinary skills and knows Mexican cuisine in its specialties. With Irma they will be able to develop their skills from the preparation of nixtamal, tortillas and tamales to moles from Chiapas and other specialties. The basis of its traditional cuisine is the fresh ingredients from the local market, its local seasoning adjusts the recipes with the seasons of the year.

Irma offers workshops on basic Mexican food, Chiapas specialties and individual Mexican dishes upon request.
