Irma López is the main cook at El Tzitz. Born in Comitán, a town 2 hours from San Cristobal de las Casas, she has lived in San Cristóbal de las Casas and has worked in the house and in the kitchen of El Tzitz for more than 20 years. Irma has developed her culinary abilities and knows the Mexican cuisine and its specialties. You will be able to develop your Mexican cooking skills with Irma from preparing tortilla dough (nixtamal),

tortillas and tamales to Chiapanecan moles and other specialties. All her traditional dishes are based on the fresh ingredients from the local market, always adjusting her recipes to the seasons.

Irma offers workshops in basic Mexican cooking, Chiapanecan specialties and special Mexican dishes as requested.
